Janelle and Spencer are veteran TV professionals and good sports, as were the show producers who gave me extra time and set me up to go first among the guest line up today. I prepped and propped myself but thank goodness there was a makeup person. I’m a klutz with makeup and you really have to put on extra for the bright television lights. I know my limits!
What did I do on the show? I demonstrated how to make baked char siu bao (ju bao), a favorite of mine since childhood. The recipe is Asian Dumplings (see the Stuffed Buns chapter) and they are scrumptious. Here's the video clip:

Thanks for posting this, I live in LA and wouldn't have caught it otherwise. Seeing the video was really useful for the part about folding in the edges of the bao -- easier to see demonstrated. This was my first time making any kind of dumpling and I feel a lot more confident now.

Hi Andrea,
I tried making this recipe yesterday. The filling was fantastic, but my bread dough was too soft.
I had a little problem converting the measurements in the books to metric. I think I used too much water or too little flour while converting US measurements to metric.
do you think you can provide the metric measurements?

The dough is very soft. What kind of flour are you using? Gold Medal unbleached yields a firmer dough than Gold Medal bleached.
You should weigh the flour. That is the most accurate way to ensure consistency. A digital scale will take care of the metric conversion in a flash -- much faster than I can do them for you.

This was a great show! I love dumplings and Shan Shan made it look so easy to make! I can't wait to try this recipe on my family and better yet, head over to Bamboo Garden to indulge! For a stay at home mom busy driving her kids everywhere, it's so nice to have these great and easy recipes!
