Please allow me to share some tricks I use for making perfect pot stickers.
1. add some cooking oil to grease the skillet after it's heated then put the dumplings in.
2. Mix some flour into the water before pouring in the skillet/wok/frying pan.
3. you will be surprised by the crispy bottom of the pot stickers and how pretty they look.

You can ignore this if you've already known since I haven't read through all your posts. Love your posting especially the one about the muslin, very helpful!
